Stevia rebaudiana is a sweetener herb belongs to Asteraceae family, native Argentina, Brazil and Paraguay. has potential qualities of also constituting source many substances with nutritional effect on the human beings. The leaves stevia contain stevioside, rebaudioside, steviolbioside, isosteviol sweeter than sucrose zero calories. These steviol glycosides considered for sweet taste have commercial value globally as sugar substitute in foods, beverages nutraceuticals. present article provides an overview different extraction methods, phytochemistry, application various products such confectionary products, bakery, dairy beverages. Various studies shows promising health benefits against diverse aliments anti-microbial, anti-obesity, anti-cancer, anti-oxidant, anti-hypertensive, anti-diabetic properties paper. Clinical revealed that glycosides, which are essential phytochemicals safe consumption no acute subacute toxicity. This study could new direction treatment diseases contribute innovative stevia-based products.
